Ingredients
Bread Layers
Böckling mousse
Cream cheese mixture

Instructions
  1. Dissolve the yeast in water.
  2. Add salt, syrup, oil, and whole wheat flour.
  3. Mix in white flour.
  4. Knead and put back into a bowl, cover and let rise for 45 minutes.
  5. Remove dough from bowl, knead, and make a round cake.
  6. Let it rise in a greased, round pan, ideally a springform.
  7. Cover and let rise for 45 minutes.
  8. Heat the oven to 200 degrees C/400 degrees F. Bake the bread for about 35 minutes.
  9. Let cool under a cloth.
Böckling mousse
  1. In a blender, mix herring, mayonnaise, and cream until smooth. Set aside.
Cream cheese mixture
  1. Mix the cream cheese and sour cream. Salt and pepper to taste. Set aside.
Mustard sauce
  1. Make sure that the ingredients for the mustard sauce are at room temperature, otherwise it will split. Mix sugar and mustard and drizzle in oil. Season with salt. Store in the fridge.
Assembly
  1. Cut the crusts off the loaf and slice into three layers. Put the first layer on a dish. Moisten with a little mineral water.
  2. Spread with mousse and cover with sliced cucumber.
  3. Press the next layer of bread. Moisten with mineral water.
  4. Spread a little butter, then cover with the salmon. Save a few for garnish later on.
  5. Drizzle the salmon with mustard sauce and add some shredded lettuce.
  6. Press the last layer down, and again, moisten with water.
  7. Spread the cream cheese mixture on top and all over the sides of the cake. Garnish with salmon, peeled shrimp, sliced radish, and egg.
  8. Pat shredded lettuce and chopped parsley onto the sides.
  9. It would be best to serve the cake after a few hours of chilling.
